Published on 19 Mar 2018🌺 SUBSCRIBE to my channel: Raffaello Cake - incredibly delicious and creamy cake, perfect combination of vanilla and coconut.Ingredients:For Coconut Sponge Cake:5 egg whites5.3 oz (150 g) sugar1.23 oz (35 g) all-purpose flour5.3 oz (150 g) unsweetened shredded coconutFor the Cream:1.51 oz (43 g) vanilla pudding powder2.64 oz (75 g) sugar1.7 us fl oz (50 ml) cold milk5 egg yolks+15.2 us fl oz (450 ml) milk2.64 oz (75 g) sugar+8.8 oz (250 g) butter, room temperatureunsweetened shredded coconut for sprinklingGrease and flour baking pan.Preheat the oven to 350 F (180 C).Separate 5 eggs. Beat the egg whites until soft peaks form.With low mixer speed, gradually add sugar, flour and coconut. Mix until just combined.Pour the mixture into prepared baking pan.Bake in preheated oven for about 20 minutes.Mix pudding powder with sugar and cold milk. Beat egg yolks. Add pudding mixture and mix well to combine.Bring the milk (450 ml) and sugar to a boil. Add pudding/egg mixture, stirring constantly. Cook for about 2 minutes until it thickens. Immediately pour the pudding into a bowl and cover with plastic foil. Press foil directly onto the pudding. Leave it to cool.Beat the butter until creamy.
